It isnt just apple, phones actually listen to our conversations in order to active voice activation features, like Hey Google for Androids, or Siri for IoS

FYI. They do have cell phone privacy cases that prevent your phone from transmitting any signals, data, or recording audio. It wont help you during a phone convo obviously but for people who are privacy-conscious this can be useful.
